Huevos Rancheros

Hello and good morning everyone. I hope everyone had a good week and is off to good things for the long weekend. I’m here to walk you through one of my absolute favorite brunch recipes that’s a tried and true go to.

Now for this recipe, I’ve made a simplified version just based on time and availability in my kitchen cabinet. While sometimes the particular beans I might use may change the recipe is relatively the same.

Now what do I like about huevos rancheros? They’re simple and quick to make while still being relatively healthy and vegetarian. No matter how I’m feeling I know that they’ll always hit the spot. I also appreciate that I don’t have to use a million pans to prepare and that it’s ready in minutes.

Now when I make this, I usually use the stewed pink beans I frequently make that go really well with a lot of my meal prep options during the week. (I’ll make sure to link that recipe here at a later date) However, I have been known to switch up the beans depending on what I have available. Sautéed black beans with peppers, onions, tomatoes, and spices go really well with this recipe as well.

Now this recipe goes super quick so I usually start by warming up my pre-made beans in the microwave while I’m cooking the rest. Next you want to begin by heating your pan with a little bit of olive oil and while you’re getting your other ingredients ready.

When your pan is warmed, add in a corn tortilla and begin warming on each side. Once tortilla is warmed and looking slightly cracked add in your other tortilla and repeat. When both are done add to your plate and add on the warmed beans. Here I will sprinkle a little bit of cheddar or Monterey Jack so it can melt on the beans while we’re cooking our eggs.

Next, add a bit more olive oil to your pan and reduce the heat to medium. Then crack both eggs into the pan and grind some fresh ground pepper on top. Eggs should take approximately 3 minutes to cook. When done transfer to plate and add additional cheese on top if desired.
