White Bean Dip

Hello lovelies! I hope everyone is doing well and their March is going well. For my first recipe of the month I’ve decided to share my white bean dip. This has become a personal favorite of mine since I got a molcajete a few months ago and am constantly looking for reasons to use it.

This recipe is super simple and goes well with so many things. I have personally been making big batches of this for meal prep and then using it on sandwiches or in wraps during the week for work lunch. My personal favorite combo is with avocado, lettuce, micro greens, and roasted red pepper, but that’s just me.

What’s great about this recipe, is that it’s really easy to change up the flavor profile depending on the beans and spices used. What I recommend, is seeing what you have available already in your fridge and spice cabinet and going from there.

For this rendition of this recipe I added in 4 cloves garlic I prefer a lot of garlic) with olive oil, salt and pepper into the molcajete and begin grinding away. Next I add in chopped white onion, fennel seed, oregano, basil, fresh parsley, red pepper flakes, and fresh squeezed lemon juice. Continue grinding and then add in white beans (approximately 2 cans of white beans). When you’re done incorporating you are ready to serve.

In making this I like the control that the use of a molcajete gives me over the consistency of the mixture. However, you can also use a food processor or blender instead. If using a food processor or blender keep a special eye when mixing so as not to over mix.

This recipe is great to serve on toast, in wraps, as a dip, or however else you like. Let me know what you think in the comments below! Any suggestions?
