The Reason I Can’t Afford A House

For my first ever blog post I wanted to start off with something special, yummy, and ohhh so simple. Now eggs are a special love of mine. They’re healthy, tasty, and versatile. They can be added to breakfast, lunch, or dinner and really take on any of the accompanying flavors. Now if I had to pick my absolute favorite way to eat eggs it would be poached over toast. Now if I’m going to go through the trouble of making eggs I might as well zhuzh it up with some avocado and hummus. This recipe is super simple but also tasty and filling making it perfect for any weekend brunch.

Now early on in the pandemic, when I was inside with more time than I knew what to do with I got really into making sourdough and have continued to bake it almost weekly. I just love the taste and texture of a fresh loaf strait out of the oven. It always adds a little something to any dish and is surprisingly simple to do, once you get the hang of things. For this reason, I would recommend using fresh sourdough with your avocado toast. While I do promise to share that recipe, that is one for another day.

For this particular recipe, I always start out by putting water to boil with 1 tablespoon white vinegar. While the water is heating up, we can begin by making the sauce that will be drizzled on at the end. Start by taking 1 tablespoon butter and microwaving it until liquified and bubbly. When warmed, butter should be added to a blender. Next take 1 egg and separate the whites from the yolk. Once separated, add yolk to melted butter. In blender add in 1/2 teaspoon of Dijon mustard, salt, freshly ground pepper, sprinkle of cayenne, and garlic powder to mixture with juice from 1/4 lemon. When all combined into blender, blend for approximately 30 seconds and put it to the side.

Now that we have our sauce complete and ready to go we’re going to want to make sure our toaster is on and toasting our sourdough bread. While the bread is toasting you can take 1/2 an avocado and slice it lengthwise. When the toast is ready, you’re going to want to spread your hummus and assemble your avocado.

Now by this point your water should be boiling and ready for the eggs. Turn heat down until it’s just boiling. Gently crack 1 egg in and use slotted spoon to stir. Set timer for 2 minutes. When 2 minutes have passed you can use the slotted spoon to gently scoop the egg and make sure that any trapped water has fallen through the cracks and then add to the top of your toast. Repeat process with second egg.

Once both eggs are done and plated we can take our sauce from earlier and pour desired amount over the top and serve while hot.
